Summer Sorbet | AIP

I’m not a fan of the term “nice cream,” because it truly does not make sense to me. What isn’t nice about regular ice cream? It’s delicious. “Nice cream,” is supposedly just healthier ice cream but many of the recipes are basically just mashed frozen bananas— I’m not about that.

Ever since eating an AIP diet I’ve been trying to perfect something slightly sweet that satisfies my dessert craving. While it doesn’t come close to ice cream, it’s a nice little summer sorbet that you can throw together in under ten minutes.

Summer Sorbet

  • 1/2 cup coconut milk*

  • 2 cubes of frozen coconut milk*

  • 1 1/2 cups frozen fruit* (strawberries or dark cherries are my preference)

  • 1/2 tsp vanilla extract or a pinch of vanilla bean seeds

  • 2 tsps honey* or maple syrup*

  • carob chips (sprinkle)

*if you cannot buy all organic ingredients the starred items would be priority


  1. Add liquid (milk and vanilla) and honey to the blender.

  2. Add frozen coconut milk and fruit next.

  3. Turn on the blender at the lowest setting and increase speed as it begins to blend.

  4. Turn off blender throughout the blending process to scrape down sides.

  5. You may need to add more fruit or milk depending on the consistency but add a little at a time.

  6. After about two to three minutes of blending it should be thick and smooth.

  7. Pour sorbet into a bowl and sprinkle carob chips over the top and enjoy right away.
